Single Variety Co uses fresh, juicy Amalfi lemons for this special marmalade. The lemons are large, very fragrant, a little sweet, and a little sour. All the lemons are hand-sliced to a medium shred and then cooked slowly to soften. Then they add the sugar and boil quickly until the traditional firm setting point is reached.
